FAMILY LADIES CRAFT DAY

Last Saturday Feb 17 Cindy invited all of the adult ladies in the family to her house for a craft day. A lot of family members had previous commitments and weren't able to attend.
Aunt Karen was there for a while, she was making calendar blocks, out of wood and scrapbook paper. 
Cindy was working on gowns for Sewing For Babies.
There is no picture of me, but I worked on afghan squares.
After we had worked for a while we stopped for brunch,
We had an egg and sausage casserole, fresh fruit, mini muffins and orange juice. It was yummy.

LEMON CHOCOLATE CHIP MINI MUFFINS

Last week while reading For What Its Worth by Karey White I came across this recipe that sounded delicious. The recipe was for full sized muffins, but I decided to go with mini-muffins.

2 C flour
1 1/4 C granulated sugar (divided use)
2 tsp baking powder
2 eggs
3/4 C milk
1/2 C butter, melted
2 tsp grated lemon zest
1/4 C fresh lemon juice
1/2 C semisweet chocolate chips

Preheat oven to 375 degrees F, Grease muffin pan or line with paper liners.
In a medium bowl, combine flour, 1 c sugar, and baking powder, In a large bowl whisk together eggs, milk, butter, lemon zest and lemon juice. Stir in flour mixture, mixing just until combined. Fold in chocolate chips. Do not overmix.

Scoop batter into prepared muffin cups. Sprinkle remaining sugar evenly over tops.
Bake for 20-24 minutes (10-12 minutes for mini muffins) or until muffins are puffed and lightly golden and a skewer inserted into center comes out clean. Let cool in pan on rack for 5 minutes.
Remove from pan and let cool completely on rack.
This recipe is easy to make and really good too.

BABY SHOWFOR KELSEY, FRANK AND BABY ABEL

On January 26 we gathered at Aunt Karen's home for a baby shower for Kelsey, Frank and baby Abel.
The decorations were cute.
A lot of diapers were needed for the cake and bouquet.
The food was yummy.
We played games.
And then Kelsey opened gifts. They got a lot of nice things for the baby.
They got a lot of nice things for Abel.

FINALLY FINISHED

I picked out a afghan pattern and colors as soon as I found out Kelsey was having a boy. I worked on it at work until it got too big to spread on my desk and still do my work. With the holidays and moving it got put aside, until the week before the shower. I put in some late nights that week, but I finished the night before. It came out really cute, if I do say so myself.
