Gluten Free Chili

I made a pot of Gluten Free Chili today for Dad. He will have several servings to put in the freezer for future meals. This is a super easy recipe, as most people know I don't like to cook, so I prefer easy.

The ingredients

mixed with hamburger and onions

Makes

one big pot of meaty chili.

CHILI

1 lb ground beef

1 c chopped onion

1 can diced tomatoes, 1 can tomato sauce & 1 can rotel tomatoes

1 can green chilies

1 can pinto beans

2-3 tsp chili powder, 1 tsp cumin, 1 tsp Salt

In large skillet, cook and stir ground beef and onion until meat is brown and the onion is tender. Stir in tomatoes, tomato sauce, green chilies, pinto beans, chili powder, cumin and salt. Cook uncovered about 10 minutes or until desired consistency.

The packages of ground beef we have in Dad's freezer is 2 lbs, so I added 2 cans of everything and 3 of beans. It filled the dutch oven pot and made a very meaty chili.

mmm...sounds good, Mary! I'll have to try this next time I have my 2 gluten-intolerant daughter-inlaws over. :-)
